So, My engine temp guage keeps shutting off... Where is the sensor located so I can check it

It should be on your coolant elbow where all the sensors are.
It has a light blue wire with yellow stripe. Only 1 wire to the sensor apparently. There is also a ground that interestingly enough is on the rear of your intake manifold. It will be a 10mm bolt holding it. That ground is for a whole bunch of things, so I doubt that is the problem. --------------------  |
