I found a set of Tomei valve springs for my 3rd gen 3sge. going from bone stock, what exactly would swapping out the springs do for me?

The Tomei valve springs are harder then the OEM ones installed. Therefore are better for high rpm lift/shut of the valves. On a stock motor you wouldn't gain anything since the OEM ones are designed for the 7200 RPM the 3S-GE does. Only when going for more aggresive cams and removing the rev limiter you would see differences between OEM and aftermarket (TOMEI, HKS etc)

Springs do not do anything for you.
you get no performance and no power out of it. (all else equal)

They merely support the mods that DO make you power and allow those mods to continue to make that power.

IE larger cams, ability to custom tune your maps, oversized valves, lightened rotating assembly.

they are a supporting mod to stabilize the valve train when raising your RPM range. Preventing valve float/lift.

stetsonaw If you you can find a way to get ahold of TODA in mainland they have the only upggrade cams for the 3SGE, assuming that you have either the Red top like mine or the earlier 3SGE I am still trying to get ahold of them they have them just sitting in their warehouse and they seem to be very stuck up. That would be a good way to go, then you would want to upgrade your valves and get the 3 or 5 angle job on the head. hope that helps. I think that we need to get a group together for a cruise in march when it gets warmer. Just an idea?
