Can any shops in Texas do it? And around how much would it cost?

You guys are over complicating the situation... its a standard Engine R&R if you have a GT, its very basic, change the motor.... if you have an ST, gather the parts you need to make your car a GT, then get the R&R done after you have all the parts and they can just swap the lot of it when they put it all back in.... very simple, its not like your shoe horning a 5.0 in a miata..
and of course have the wiring done by a professional
