The map lights on the 99 GT Conv are really dim....I was wondering if anyone could tell me if these would work as brighter replacements?

That light bulb is called C5W, but you need to measure the length of it, as they differ. Of course a few mm bigger bulb shouldn't be a problem, but they range somewhere between 29 and 42 mm, so ...
You also need to be aware not to buy the CANBUS version of the light bulb, as our cars don't have the CANBUS.
