Ok. So if I were to ship my car to New Zealand, what will I have to do to make it road legal there?

I wouldn't think you would have to change much if anything. From the looks of it as long as it can pass standard tests like warrant of fitness and emissions tests it should be ok. If you have anything that would need a cert (different seats, coilovers, major engine modifications etc..) you might need to get them certed once here as it won't pass the wof if they are not.
Maybe the best thing is to call the NZTA and just ask them what you would need to do that way there is no surprises when you get it here
