in and attempt to get a rusty, stuck, and almost stripped bottom bolt out of the piping to replace my thermostat, I unscrewed a piece on top of what I think was the A/C unit. Pressure was released. What did I just do?

If you let everything out you'll have to get an A/C shop to pull a vacuum and refill it, if you were able to stop it in time you could top it off yourself.
