Jet Li was the National Wu Shu champion of China for five years straight. And then he retired from the sport at the age of 17!! Yes, Jet Li does use string and harnesses, but only in the epic Chinese films when his character flies or leaps 50 feet in the air or crazy stuff like that. All his martial arts scenes are for real.

And you cant fairly compare to Jackie Chan's more recent movies because he purposely does comedy action films. They are suppose to be funny, not super bad ass like Bruce Lee or Jet Li films.
