Simple and general question.......what is a limited slip diff, what does it do, and who has it??

The nice thing about LSD on a FF drive application is that it dramatically reduces torque steer. Since you have an ST, and assuming you do not have a turbo or other performance modifications, you will notice no difference except in slippery conditions.
