NEVERSTOP isn't home yet from his trip out west, otherwise I'd ask him...

Since I've bought his motor, I need an MAF sensor meter. The motor is an ST205 block with an ST185 top end conversion...so would I need an MAF from an ST205 or ST185? Or is there a difference?

From everything I've seen the second gen 3S ECU has a red label and the third gen has a black label. By no means am I an expert but that is just what I've observed over the years. You might call a dealership and give them the part number if you're still not sure.

That is also the case (or a similar one at least) with the 20V 4AGE's... the silvertop with AFM has orange lettering and the Blacktop MAP one has black lettering... Not the best way to tell... but yeah...
