how much gains would i expect from a p&p if any1 did that to their 5sfe?...i was told that it would probably get 10-15hp....but after the fact, would i also need to adjust the valves seeing that engine work was done?

I'm guessing Stage 3 giving 20-30, head refresh, pocket port, and upgraded valvetrain.
