Whenever i start off the line quickly, or drive my car pretty hard... afterwords what will happen, is when i push the gas in it will over rev... like to an insane point... like 5th gear 40 mph i can get it up to redline... anyideas on whats going on???

considering you said 5th gear i take it you have an MT, which means it is your clutch slipping real bad.
