How much can it realistically take without a bottom end build/head work??? Reason I ask is because when I do inevitably do the swap, I'd like to work on building the motor to the 300WHP range.

How much boost and power can a GenII 3S take???

you should read the power primer. it will tell you everything the motor can do, and what it takes to get there

here is a quote from that site

"A gen3 3S-GTE is no better a platform with which to make big power than a gen2. Although the gen3 produces more power in its stock configuration, all of that power comes from simple improvements that can be applied to a gen2 engine.
