Would a 2" Drop work with stock rims + tires or should i just get some rims and springs at the same time?

Go for it. I personally recommend coilovers over springs due to the adjustability. Even with stock rims
it should look better.

I would wait until you have the wheels you want, then lower it.

Off Topic, but when I get my Coilovers installed, what height would you all recommend?
EDIT: with 17" wheels

Play with it. I had my car way low at one time, and cracked everything. I lifted it up a bit and everything is fine. I stay take driveways at angles.
