So I am not an expert when it comes to installation, and for every car I've had all I needed to do was buy a harness, wire it to the radio, and plug and play. But the harnesses I have seen do not fit my car at all, am I missing something? (I heard that I needed some type of amp. cord or something)

You can do 1 of 2 things. 1. reach under your amp and feel for a wiring harness. You should find a harness connected to the amp, and another one plugged into that. Disconnect the harness and pull it around and over the amp. That harness will fit the aftermarket harness that you have. 2. Buy a Toyota/Lexus amp integration harness. most places sell them for like 20 bucks, I have seen them on ebay for like 7 or 8 bucks. If you use this option, make sure that your new head unit has pre-amp rca outputs or it will not work. Also... If you go with the amp integration harness... (on the harness) make sure that you splice the Blue and Blue with white stripe wires together and connect them to the system remote (usually Blue with white stripe) wire on the stereo harness. The Blue one is so your power antenna works and the Blue/White stripe is so the stereo will turn on your factory amp. Hope this helps....
