My wife's car (Camry w/ 2.2l) is having some weird starting issues with it and Im hoping you guys and gals can help me...A few weeks ago, her car at startup was acting like it was dead and it made the clicking noise, so i went out there and jumped it and it started just fine. But then about a week later it would happen again... So now, it happens about every time she goes to start it up.

It sounds like the connections in the starter are burnt up.
There is the possibility of a weak battery or bad connections too. Just to make sure have the battery tested and make sure your battery terminals are tight before you change the starter. The starter itself just clicks, right? And you hold the key to start, and press the gas pedal? Pressing the pedal has nothing to do with the starter turning over. It's a really simple circuit. Oh, and I wouldn't bother getting the starter tested. Bench testing usually calls a marginal starter good. However, you can replace just the connections in the starter. It will save you ~ $100.
