So after having my car for just over 2 years...and for the first time...the FIRST TIME...my check engine light went on

It's actually perfectly normal to have the light go on and off.
If the ECU doesn't see the problem for 3 consecutive trips, it will turn the light off. If the problem comes back, it will of course turn the light back on. The code will still be stored in memory regardless. As far as I know, OBDI [up to 95 in the Celicas] don't have EVAP codes. The gas cap is an EVAP code.
