Okay, so i installed an AFR gauge this weekend, and everything seemed to be in working order. Until i got on the road for work this morning. After my engine warms a bit, I fall lean during idle (red light); and WAY lean when i begin driving (green light), after a second or two (not sure yet if it's related to RPM or speed) it'll return back to stoich, and stay there until i come to a COMPLETE stop and will gradually dip back down to lean.

That's correct for a stock 5S-FE ECU [I watched a very good quality narrow band reader for years on my last 5S-FE]. I'd have to watch it in action to be sure but what you're seeing is in line with my experience but basically that's the 5S ECU doing what it's designed to do - save you on gas. What you need to do is get your SAFC-II wired up and watch for knock to be excessive during those lean moments.
