Will they stand up to a long trip? (say, 700-800 miles) or will they overheat and cause problems?

It helps a very nominal amount.
Stephen, if you're Honestly worried, then spend the money to have it powder coated. Redoing the welds will help, but not save you. Likewise wrapping everything but the welds will still super heat the welds. -------------------- 1991 MR2 - T-tops - Crimson Red - Gen3 3SGTE - Lots of money
