Actually, there are specific reasons -- tracing back to the Toyoda (note the spelling) patron. If you look up early generations of Celicas, they're adorned with a dragon logo. More specifically, a dragon designed to mimic the Chinese dragons carved onto what are known, understandably, in North America as dragonboats, of which Toyoda was a fan.

The blue dragon used was to represent a heavenly, or celestial dragon. Thus Celica, and the first-gen's symbol.

The Celica's sister car is the Carina, which is a set of stars which is part of a constellation no longer commonly recognized -- Argo Navis, the ship. The Argo was the ship, largely powered by Greek heroes rowing, used by Jason in his quest to steal the Golden Fleece. After his success, the gods moved the Argo into the sky as a constellation.
