I've gotten into the habit of shifting into neutral while driving to coast and save fuel... BUT if the injectors are cut off, it would be better for me to leave it as the engine won't be "idling".

yes.
The injectors shut off when there is no throttle until you hit 1500 rpms, then they fire again to maintain idle. -------------------- |
