Its been awhile coming, but I've finally pulled my finger out and finished it! I'd post the pics here, but unfortunatly I can't hot link.

Xbox:

Modded (obviously), 60Gb hard drive, mod to enable auto start on power (cap over the switch gives inpression of being pressed for 1sec). I'm running XBMC as the default dashboard with a script that resumes music playback of what you last played.
As its so big, its in the boot and velcro'd to the carpet - Its not going anywhere. The way its positioned means that I can just reach around from the front, flip the seat down and insert a dvd if I want to.

Power:

Running a 300w pure sine wave. Haven't had any probs with it at all. Have also put a relay inside that switches the power on via the remote out from the deck.

Controller:

I took the original controller, stripped it down and then soldered wires onto each of the button pads. Those wires then run to another panel that I made to fit in the dash. Hardest part was doing the soldering - very very fiddley. Oh, and resist the urge to pull off the triggers - the controller wont work anymore.
This was probably the biggest part of the project. Didn't really take that much time, but I'm lazy so it ended up taking ages. So as you can see in the pics, I've got all 12 buttons from the controller in a nice configuration on the dash.
As the expansion ports on the controllers are just usb ports, I re-wired one to have a usb cable coming out of it. This way I can plug things (eg keyboard) in without going into the boot.

Wireless:

Finally, I wanted an easy way to update the music. I mounted an 802.11 wireless access bridge in the boot. My PC inside has all the security details saved and will automatically connect when it see's the bridge come online. This means that when my car is in range of the house, I not only have access to my home network (copy stuff down to the car) but I also have internet.

Be interested to know what you think of the setup. I'm pretty happy with it - there's not much else I really want to do. About the only thing that stands out is an override switch so I can make it run without the deck - but thats easy.
