i found a rim i like but it has an offset of 48mm if i use a 20mm spacer would that be a bad thing?

You should be ok as long as you have enough thread left to bolt the wheels on, although 5 stud so should be fairly safe with losing some thread.

That's the problem... rear bolts are 28mm and front bolts 25mm -> You don't have chance use 20mm spacers without: a) change bolts to longer ones (but how?) b) use spacers with own bolts like those...
