Are old american cars desireable in other areas of the world??? I don't even know how people over here can afford to fill them up, but over there??

It's part of culture... If you have US car you must have also US plate and show it at the meet  ...and it's also business, one pair of plates cost's about 20USD... Of course you must have also "veteran" plate (V 1234) or "common" registration plate (1A2 3456) or you can't drive it on public road. So that Minnesota plate is just swap for show
